High purity xanthan gum is an extracellular microbial polysaccharide produced by fermentation of Pseudomonas aeruginosa. Through special extraction and purification processes, its purity reaches a high level, usually up to 99% or more, maximizing the removal of impurities and other non xanthan gum components.
Xanthan gum, also known as xanthan gum or Han Sheng gum, is a "pentasaccharide repeating unit" polymer composed of D-glucose, D-mannose, D-glucuronic acid, pyruvic acid, and acetic acid.
